Rocket in our A-Z - Cooking Index
Rocket is a green salad leaf that is the common name for the plant Eruca Satria
In cooking Rocket is usually used in salads but can also be used as a pizza topping (best applied just before serving so it is slightly wilted but not cooked) and it can be used as an ingredient of pesto sauce in place of basil leaves.
It has a strong peppery taste in comparison to most salad leaves and its strength contrasts well with other strong flavours, most noticeably parmesan and balsamic vinegar.
Rocket is a native to the Mediterranean and widely used in Italian cuisine.
It is also known as rucola, mainly on American and Italian menus.
