I'm going to try eating more healthy this year. So far so good.
Neil made some chicken nuggets last night that were very good. He basically threw some bread crumbs in a little baggy, with Cajun spices and red and black ground peppers. He then took no more than a teaspoon of oil, and tossed the pound or so of bite-size chicken breast pieces in the oil. Form there, he put the chicken in the bag with the bread crumbs and got them nice and coated. Then he baked them.
Nice, spicy, and low in fat.
He served the nuggets with a couple of celery stalks and some baked potato slices.
