Thai Peanut Chicken Salad (Quick)

Recipe Ingredients

  Dressing
1/2 cup 118mlBottled Thai peanut sauce
1 tablespoon 15mlLight mayonnaise
3 tablespoons 45mlFresh lime juice
  Salad
1   Roasted chicken breast - boned and skinned
1   Carrot - coarsely grated (large)
1   Celery rib - very finely (medium) slivered
1   Red bell pepper - finely slivered (medium)
1/4 teaspoon 1.3mlSalt
3 cups 711mlPrepared torn lettuce
3   Lime wedges

Recipe Instructions

1. To prepare the dressing: Stir together the peanut sauce, mayonnaise and lime juice. Set aside.

2. To prepare the salad: Dice the chicken breast finely. Combine with the carrot, celery, bell pepper and salt. Toss with about half of the dressing. Add the lettuce and toss gently.

3. Serve the salad with a lime wedge and the remaining dressing on the side.
