Baharat - Arabic Curry Powder Recipe - Cooking Index
| 1/2 cup | Black peppercorns | |
| 1/4 cup | Coriander seeds | |
| 1/4 cup | Cinnamon sticks - crushed | |
| 1/3 cup | Cumin seeds | |
| 2 teaspoons | Cardoon seeds - shelled | |
| 1/4 cup | Nutmeg - ground | |
| 1/2 cup | Paprika |
Place coriander and cumin seeds in skillet and dry fry for a minute or two--do not burn.
Place unground ingredients in spice grinder and grind to a fine powder.
Mix together remaining ingredients with the freshly ground spices.
Store in air-tight container in cool dark place.
