16 Bean Soup

Recipe Ingredients

2 cups  Mixed dried beans (1 pkg).
2 cups  Diced ham (other options are smoked sausage, ham bone, or ham hock)
1 x  Large chopped onion
1 oz  28 oz. Can chopped tomatoes
1/2 cup  Cliced carrots
1/2 cup  Sliced celery
2 x  Quarts Water
1 x  Tsp chili powder
-   Salt and pepper to taste

Recipe Instructions

Rinse the dried beans and soak in salted water overnight. To cook, rinse the beans and place in a covered kettle with the meat product and simmer 2 1/2 to 3 hours. Add the onion, tomatoes, carrots, celery, and chili powder and simmer another 45 minutes. Add salt and pepper to taste.
