Sara's Cajun Fish Fillets

Recipe Ingredients

4   White fish fillets - (6 oz ea), such as
  Lemon sole
  Milk - for soaking
4 tablespoons 60mlOlive oil
  Flour for dredging - seasoned with
  Cayenne pepper, paprika, dried thyme,
  White and black pepper, and salt
  Garnish
  Pickled Onion - see * Note
  Sara's Remoulade sauce - see * Note

Recipe Instructions

In a shallow baking dish, soak the fish in milk for about 10 minutes. In a heavy saute pan heat the olive oil over medium-high heat until it is hot but not smoking. Remove the fish from the milk and dredge it in the seasoned flour. Saute the fish for 2 to 3 minutes on each side, or until it just flakes. Serve immediately.
