Family Style Meatloaf

Recipe Ingredients

2 cups 292g / 10ozFresh breadcrumbs
3/4 cup 46g / 1.6ozMinced onion
1/4 cup 23g / 0.8ozMinced green pepper
1/2 cup 118mlSliced mushrooms
2   Eggs - beaten
1 lb 454g / 16ozGround chuck
1/2 lb 227g / 8ozGround veal
1/2 lb 227g / 8ozGround pork shoulder
2 tablespoons 30mlGrated horseradish or prepared horseradish
2 1/2 teaspoons 12mlSalt - or to taste
  Freshly-ground black pepper - to taste
1 teaspoon 5mlDijon mustard
1/4 cup 59mlMilk
3/4 cup 177mlKetchup
2   Bacon - (to 3 slices)

Recipe Instructions

Preheat oven to 400 degrees.

In a large bowl thoroughly combine all ingredients reserving 1/2 cup ketchup and bacon. Grease a 9- by 5-inch baking loaf pan.

Gently shape meat mixture into pan. Cover with slices of bacon and brush with remaining ketchup.

Bake for 50 minutes. Cool for 15 minutes, remove from pan and slice. Makes great sandwiches the next day.

This recipe yields 4 to 6 servings.
