Marinated Mushrooms

Recipe Ingredients

1/4 cup 59mlExtra-virgin olive oil
3 tablespoons 45mlFresh lemon juice
1   Fresh thyme sprig
1/4 teaspoon 1.3mlFennel seeds
1/2 teaspoon 2.5mlCrushed coriander seeds
1   Garlic clove - thinly sliced
1/4 cup 27g / 1ozMinced celery
2 teaspoons 10mlBlack peppercorns
1   Bay leaf
1/4 cup 59mlWater
1 lb 454g / 16ozSmall button mushrooms - trimmed,
  Or regular-size mushrooms, quartered
1/2   Lemon
1 tablespoon 15mlFinely-chopped flat leaf parsley

Recipe Instructions

Combine all ingredients except mushrooms, lemon and parsley in a saucepan and bring to a boil, cover, and simmer for 5 minutes. Add the mushrooms to mixture in saucepan and simmer another 5 minutes.

With a slotted spoon remove mushrooms to a bowl. Boil the cooking liquid until reduced and thickened. Pour sauce over mushrooms and chill.

For service, sprinkle with parsley.

This recipe yields 6 servings.
