Berry-Ginger Ice

Recipe Ingredients

1 1/2 cups 355mlFresh blackberries
2 tablespoons 30mlWater
1 1/2 cups 355mlSliced fresh strawberries
1 1/2 cups 355mlFresh blueberries
1/2 cup 99g / 3.5ozSugar
1 teaspoon 5mlGrated peeled fresh ginger
1 cup 237mlUnsweetened sparkling lemon-lime water
  Fresh mint - for garnish

Recipe Instructions

Place blackberries and water into covered microwave dish. Microwave on medium until berries are soft. Strain through fine sieve or cheesecloth. Discard seeds.

Place strawberries, blueberries, sugar, grated ginger, sparkling water and blackberry puree into food processor. Process until smooth. Pour into shallow container and freeze. Serve garnished with fresh mint.
