Broiled Salmon With Cucumbers

Recipe Ingredients

1 cup 62g / 2.2ozDiced onions
1/2 cup 118mlVinegar
4   Garlic cloves - minced
2 teaspoons 10mlMinced peeled gingerroot
1 teaspoon 5mlLow-sodium soy sauce
2   Cucumbers - thinly sliced
1 1/2 lbs 681g / 24ozSalmon fillets
1 tablespoon 15mlOlive oil
4 cups 640g / 22ozHot cooked rice

Recipe Instructions

In a large nonstick frying pan over medium-high heat, combine the onions, vinegar, garlic, ginger and soy sauce. Bring to a boil, stir and cook for 3 minutes. Remove from heat. Add the cucumbers. Set aside to cool.

Rub the salmon on both sides with the oil. Broil about 6 inches from the heat for 4 to 5 minutes per side, or until cooked through.

Serve on a bed of rice topped with the cucumbers.
