Pasta Salad BLT Recipe - Cooking Index
3 cups | 711ml | Cooked whole wheat pasta, bow tie |
Or other kid-friendly shape | ||
1 cup | 62g / 2.2oz | Chopped tomatoes |
1 cup | 237ml | Shredded romaine lettuce |
Dressing | ||
1/4 cup | 59ml | Low fat mayonnaise |
2 tablespoons | 30ml | Low fat yogurt |
2 teaspoons | 10ml | White wine vinegar |
1 | Garlic clove - minced | |
Salt - to taste | ||
Freshly-ground black pepper - to taste | ||
1/4 lb | 113g / 4oz | Bacon - cooked crumbled |
In a bowl, combine the cooked pasta, tomatoes, and lettuce. Mix to combine.
In a small bowl, whisk together the mayonnaise, yogurt, vinegar and garlic. Season with salt and pepper to taste.
Toss the pasta with enough dressing to coat. Sprinkle the bacon over the top and serve.
This recipe yields 4 servings.
