Crab Stuffed Potatoes

Recipe Ingredients

4 teaspoons 20mlBaking potatoes (large)
4 tablespoons 60mlMargarine or butter
1/2 cup 118mlSour cream - (I use non-fat)
4 teaspoons 20mlOnion - grated
1 teaspoon 5mlSalt
1/2 lb 227g / 8ozCrabmeat or imitation crab
  Paprika - to taste

Recipe Instructions

Bake 4 large baking potatoes. Scoop out insides and set aside. Mix together with elec. hand mixer on low speed for one minute: diet margarine, sour cream substitute, grated onion, and salt. Fold in crabmeat gently with a fork Fill potatoes with mixture and sprinkle liberally with paprika. Reheat in 450F oven about 15 minutes.
