Lobster Newburg - Pauline's Favorite

Recipe Ingredients

6 tablespoons 90mlButter or margarine
2 tablespoons 30mlFlour
3 cups 187g / 6.6ozCooked lobster meat
1/8 teaspoon 0.6mlNutmeg
  Paprika
1 teaspoon 5mlSalt
3 tablespoons 45mlSherry
3   Yolks
2 cups 474mlMilk or light cream
  Toast slices

Recipe Instructions

In double boiler top, melt butter; stir in flour, lobster, nutmeg, paprika, salt, sherry.

Beat yolks slightly; add cream or milk; mix well.

Slowly stir yolks into lobster; cook over hot water, stirring, until just thickened.

This recipe is equally good with crab, shrimp or scallops, or a mixture.
