Recipe Ingredients

4   Sole - pat dry
10   Scallops (small)
3/4 cup 46g / 1.6ozCrab meat
3/4 cup 177mlSmall cooked shrimp
1/2 cup 73g / 2.6ozMonterey Jack cheese - grated
  Step Two
1/2 cup 99g / 3.5ozButter
2   Egg yolks
1 tablespoon 15mlLemon juice
1/2 teaspoon 2.5mlDry mustard
1/8 teaspoon 0.6mlSalt
  Step Three
2 tablespoons 30mlParsley - chopped
  Paprika

Recipe Instructions

In buttered au gratin dishes, place one filet on bottom, top with scallops, crab, shrimp, cheese, and second filet. Set aside.

Melt butter. Place remaining ingredients in bowl. With mixer on high, slowly add butter in steady stream until sauce is thickened and creamy.

Pour sauce over fillets and bake at 450F for 10 to 15 minutes.
