Shrimp 'n' Rice Salad

Recipe Ingredients

1 lb 454g / 16ozShrimp; cooked - peeled, and
2 cups 320g / 11ozRice - cooked
1/4 cup 27g / 1ozCelery - thinly sliced
1/4 cup 59mlOlives - stuffed, sliced
1/4 cup 36g / 1.3ozPepper - green, chopped
1/4 cup 36g / 1.3ozPimiento - chopped
1/4 cup 15g / 0.5ozOnion - minced
1/2 teaspoon 2.5mlSalt
1/4 teaspoon 1.3mlPepper
3 tablespoons 45mlMayonnaise
  Lettuce
2   Tomatoes - cut in wedges
  Celery leaves
  French dressing - commercial

Recipe Instructions

Combine first 10 ingredients, and toss lightly. Chill thoroughly.

Serve on lettuce, and garnish with tomato wedges and celery leaves.

Serve with French dressing.
