Shrimp Scampi Gambino-Style Recipe - Cooking Index
2 lbs | 908g / 32oz | Shrimp - (preferably under, 15 to a pound) |
3/4 lb | 340g / 11oz | Butter - softened |
3 | Shallots - chopped fine | |
4 | Garlic cloves - crushed | |
Chopped fine | ||
1/2 | Lemon - juice of | |
2 tablespoons | 30ml | Chopped fresh parsley |
1/2 cup | 73g / 2.6oz | Plain dry bread crumbs |
1 | Egg yolk | |
2 teaspoons | 10ml | Red devil hot sauce |
Salt to taste | ||
Pepper to taste |
Clean, devein and butterfly shrimp. Place them in large, flat pan.
Mix butter, shallots, garlic, lemon juice, parsley, bread crumbs, egg yolk, hot sauce and salt and pepper to taste in bowl.
Spoon over raw shrimp. Place under broiler for 3-5 minutes, checking occasionally not to overcook.
Spoon excess sauce over shrimp and serve.
