Shrimp Scampi

Recipe Ingredients

2 lbs 908g / 32ozLarge shrimp - shelled, deveined
4 tablespoons 60mlDiet margarine
1 tablespoon 15mlOlive oil
2 tablespoons 30mlLemon juice
1/4 cup 15g / 0.5ozChopped shallots or green onions
1 tablespoon 15mlMinced garlic
1/4 teaspoon 1.3mlSalt
  Freshly-ground black pepper - to taste
1/4 cup 36g / 1.3ozChopped parsley
4 cups 948mlCooked spaghetti
2 tablespoons 30mlBrandy or sherry - (optional)

Recipe Instructions

In a large skillet, heat olive oil. Add the shrimp and cook until opaque in the center; remove to a warm plate.

Add the garlic and shallots to the skillet and cook until fragrant (about 10 seconds), then add the lemon juice, (brandy or sherry), parsley, salt and pepper. Remove pan from heat and add diet margarine.

Return the shrimp to the pan and toss to coat with the sauce. Arrange over pasta. Spoon remaining sauce over shrimp.

This recipe yields 6 servings.
