Manicotti - (Store Bought Version)

Recipe Ingredients

2 tablespoons 30mlOlive oil
1 cup 110g / 3.9ozDiced carrots
1/2 cup 55g / 1.9ozDiced celery
1 cup 237mlDrained canned mushrooms
2   Garlic cloves - minced
1/2 teaspoon 2.5mlDried oregano
3 cups 711mlBottled spaghetti sauce
  (use your favorite brand)
8   Refrigerated manicotti tubes (large)
3 tablespoons 45mlParmesan cheese
1/4 cup 23g / 0.8ozMinced fresh parsley - for garnish

Recipe Instructions

Preheat oven to 350 degrees.

In a skillet heat olive oil. Add carrot, celery and cook for 3 minutes. Then add mushrooms, garlic, oregano and cook, stirring for 3 minutes more. Stir in spaghetti sauce.

Arrange manicotti tubes in a 9- by 13-inch baking dish. Spoon sauce over manicotti and sprinkle with Parmesan cheese. Place in oven and cook for 20 minutes. Uncover and bake for 5 to 10 minutes more until bubbling and heated through. Serve each portion topped with fresh parsley.

This recipe yields 4 servings.
