"Second Time Around" Couscous Salad

Recipe Ingredients

1 cup  Cooked couscous
1   Scallion - thinly sliced
1   Celery rib - finely diced
1 cup  Smoked or regular cooked chicken - cut bite-size chunks
1 cup  Frozen peas - thawed
1 oz  Blue cheese
1/3 cup  Mayonnaise
1 teaspoon  Dijon mustard
  Rice vinegar - to taste
  Salt - to taste
  Freshly-ground black pepper - to taste
  Chopped fresh parsley

Recipe Instructions

In a mixing bowl combine the couscous, scallion, celery, chicken and peas.

In another mixing bowl combine blue cheese, mayonnaise, mustard and rice vinegar to taste; season with salt and pepper. Add the chicken-couscous mixture and fold to combine. Garnish with chopped parsley.

This recipe yields 2 servings.
