Easy Brunch Bake

Prepare this casserole the night before, and simply pop it in the oven the next morning.

Serves: 4 people

Recipe Ingredients

1 cup 198g / 7ozFat-free egg substitute
1 cup 237mlSkim milk
4 oz 113gItalian bread - cubed
3/4 cup 177mlSliced cooked turkey sausage
3/4 cup 109g / 3.8ozShredded reduced-fat sharp cheddar cheese
1/4 teaspoon 1.3mlFreshly-ground black pepper
3   Canned whole pimientos - drained, julienned

Recipe Instructions

Preheat the oven to 350 degrees. Spray an 8-inch square baking pan with nonstick cooking spray.

In a medium bowl, combine the egg substitute and milk. Add the bread, sausage, half of the cheese and the pepper; stir until all of the bread is moistened.

Pour the mixture into the pan; sprinkle evenly with the remaining cheese. Bake until the top is golden and a knife inserted in the center comes out clean, about 40 minutes. Serve, garnished with the pimientos.
