1 | Vanilla wafers - (11 oz) | |
1/2 cup | 99g / 3.5oz | Butter or margarine - (1 stick) - softened |
2 cups | 396g / 13oz | Powdered sugar |
1 | Frozen orange juice concentrate - (6 oz) - slightly thawed | |
2 cups | 186g / 6.6oz | Flaked coconut - (to 3 cups) |
Crush vanilla wafers in a plastic bag. With an electric mixer, beat butter and sugar until well-mixed. And orange juice; mix well. By hand, blend in crushed vanilla wafers.
(Food processor directions: Crush vanilla wafers in food processor fitted with steel blade. And butter, sugar and orange juice; process 10 to 15 seconds, or until well-mixed.)
Roll mixture into small balls, then roll balls in coconut. Cover; refrigerate or freeze.
Yields about 5 dozen (1 inch) balls.
Testers notes: Simple-to-prepare, no-bake recipe with an attractive appearance. Great on a cookie tray because of the tangy, citrus taste. These cookies become soft if not stored in refrigerator or freezer.
