Turkey Cordon Bleu

Recipe Ingredients

1 tablespoon 15mlAll-purpose flour
1/4 teaspoon 1.3mlFreshly-ground black pepper
1/4 teaspoon 1.3mlPoultry seasonmg
4   Boneless skinless turkey breast cutlets - - (3 oz ea)
1 tablespoon 15mlOlive oil
1 cup 237mlThinly-sliced mushrooms
1   Onion - chopped
1/4 cup 36g / 1.3ozChopped lean ham
2   Part-skim mozzarella cheese - (3/4 oz ea) - halved
1/4 cup 59mlCanned pimientos - julienned

Recipe Instructions

Preheat the oven to 350 degrees. Spray an 8-inch square baking pan with nonstick cooking spray.

In a gallon-size sealable plastic bag, combine the flour, pepper and poultry seasoning. Add the turkey; shake to coat.

In a large nonstick skillet, heat the oil. Add the turkey and cook until lightly browned, about 2 minutes on each side. Transfer to the baking pan.

In the same skillet, combine the mushrooms, onion and ham; cook, stirring constantly, until softened, about 5 minutes. Spoon evenly over the turkey; top each cutlet with a cheese slice. Bake until the turkey is cooked through, about 15 minutes. Serve, garnished with the pimiento strips.
