Big Beef And Veggie Burgers

Recipe Ingredients

1 lb 454g / 16ozLean ground beef (10% or less fat)
2 lbs 908g / 32ozZucchini - shredded (medium)
1   Onion - finely chopped
2 tablespoons 30mlMinced dill
2 teaspoons 10mlDry mustard
1   Jalapeño pepper (optional) - deveined and minced
  = (wear gloves to prevent irritation)
1/4 teaspoon 1.3mlFreshly-ground black pepper
3 teaspoons 15mlWhole-wheat pita breads - halved crosswise (small)
1 1/2 cups 355mlTorn romaine lettuce
2   Tomatoes - sliced

Recipe Instructions

Spray the broiler or grill rack with nonstick cooking spray; set aside. Preheat the broiler, or prepare the grill.

In a large bowl, thoroughly combine the beef, zucchini, onion, dill, mustard, jalapeño (if using) and black pepper. Form into 6 patties.

Arrange the patties on the rack; broil 5 inches from the heat 4 to 5 minutes on each side (medium to well-done). Place a hamburger in each pita and top with the lettuce and tomatoes.

This recipe yields 6 servings.
