Garlic Roast Potatoes

Serves: 4 people

Recipe Ingredients

900 x  Potatoes - large peeled
50 x  Olive oil
120 x  Lemon juice freshly squeezed
2 teaspoons  Dried oregano
3   Garlic cloves finely chopped
  Salt & pepper
120 x  Water

Recipe Instructions

Preheat oven to 230C. Cut potatoes into quarters or eights lengthwise, place in large shallow ovenproof dish.

Add remaining ingredients and stir potatoes to coat. Bake at top of oven, uncovered for 1 hour or until golden, crisp on the outside and soft inside.

Rearrange the potatoes and add more water during the cooking if necessary.
