Alaska Quick Baked Cod Recipe - Cooking Index
| 1/2 lb | Cod fillets - thawed if necessary | |
| Salt - to taste | ||
| Freshly-ground black pepper - to taste | ||
| 1 | Tomato - peeled, chopped | |
| 1 1/2 teaspoons | Chopped green onion | |
| 1/4 teaspoon | Basil - crushed | |
| 1/4 teaspoon | Oregano - crushed | |
| 1 teaspoon | Butter or margarine | |
| 1/4 cup | Shredded Monterey Jack cheese | |
| 1 tablespoon | Grated Parmesan cheese |
Cut cod into serving-size pieces; place in buttered baking dish. Sprinkle with salt and pepper. Combine tomato, onion and seasonings; spoon over cod. Dot with butter.
Bake at 450 degrees 8 to 10 minutes or until cod flakes easily when tested with a fork. Sprinkle with cheeses; bake until melted.
This recipe yields 2 servings.
