Oshkinigikwe (Tomato Stew) Recipe - Cooking Index
4 lbs | 1816g / 64oz | Miniature mexican tomatoes - - washed & deseeded |
12 | Shallots - chopped | |
1/3 cup | 78ml | Water |
1/3 cup | 30g / 1.1oz | Cucumber - minced |
1 teaspoon | 5ml | Salt |
1/4 teaspoon | 1.3ml | Black pepper |
1/3 cup | 20g / 0.7oz | Corn flour |
Place tomatoes in a large saucepan, add the shallots & water & simmer for 30 minutes, stirring gently on occasion. Add the cucumbers & salt & pepper, simmer for 10 minutes, stirring, until the tomatoes break up. Quickly add the corn flour, 1 tablespoon at a time, stirring slowly.
Simmer for 5 minutes & serve.
