Mexican-Style Alaska Cod Recipe - Cooking Index

Aluminum foil - (12" x 18" ea) | ||
4 | Cod fillets - (4 to 6 oz ea) | |
2 cups | 125g / 4.4oz | Frozen whole kernel corn |
1/2 cup | 73g / 2.6oz | Chopped green or red bell pepper |
1/2 cup | 118ml | Salsa |
1/4 cup | 4g / 0.1oz | Chopped fresh cilantro |
Preheat oven to 450 degrees or preheat grill to medium-high. Spray foil with nonstick cooking spray. Place one cod fillet on each sheet of foil. Top with corn, green pepper, and salsa.
Bring up sides of foil and double fold. Double fold ends to form four packets, leaving room for heat circulation inside packets.
Bake 18 to 22 minutes on a cookie sheet in oven or grill 10 to 12 minutes in a covered grill. Sprinkle with cilantro before serving.
