Poached Alaska Cod With Lemon Butter Sauce Recipe - Cooking Index
1 1/2 lbs | 681g / 24oz | Cod fillets - thawed if necessary |
1 | Water | |
1/4 cup | 59ml | Lemon juice |
1 cup | 62g / 2.2oz | Onion - sliced (small) |
1 | Bay leaf | |
4 | Peppercorns | |
4 | Whole cloves | |
1 teaspoon | 5ml | Salt |
Minced fresh parsley | ||
Lemom Butter Sauce | ||
1/4 cup | 49g / 1.7oz | Butter |
2 tablespoons | 30ml | Lemon juice |
Cut cod into serving-size pieces. Combine water, lemon juice, onion and seasonings. Bring to boil; simmer 20 minutes. Add cod. (If necessary, add boiling water to cover cod.) Simmer, covered, 5 to 10 minutes or until cod flakes easily when tested with a fork.
Remove cod to platter. Pour Lemon Butter Sauce over cod; garnish with parsley.
Lemon Butter Sauce: Melt butter; add lemon juice. Serve warm. (Makes about 1/3 cup)
This recipe yields 4 to 6 servings. Recipe may be halved.
