Sweet And Sour Alaska Halibut Recipe - Cooking Index
1 | Pineapple chunks - (8 oz) | |

2 tablespoons | 30ml | Sugar |
4 teaspoons | 20ml | Cornstarch |
1/4 cup | 59ml | Vinegar |
1 tablespoon | 15ml | Soy sauce |
1/2 | Green or red pepper - cut into 3/4" cubes | |
1/4 cup | 15g / 0.5oz | Sliced green onions |
Hot Poached Halibut | ||
1 1/2 lbs | 681g / 24oz | Halibut steaks - thawed if necessary |

2 | Lemon slices | |
4 | Parsley sprigs | |

Drain pineapple; reserve syrup. Add water to reserved syrup to equal 1 cup. Combine with sugar, cornstarch, vinegar and soy sauce. Cook and stir until thickened.
Add pineapple, peppers and green onions; cook 1 minute longer. Serve over poached halibut.
Poached Halibut: Cover halibut with boiling, salted water. Add onion, lemon, parsley and peppercorns. Simmer, covered, allowing 10 minutes per inch of thickness measured at its thickest part, or until halibut flakes when tested with a fork.
This recipe yields 4 servings.
