Sweet And Sour Alaska Halibut

Recipe Ingredients

1   Pineapple chunks - (8 oz)
  Water - as needed
2 tablespoons 30mlSugar
4 teaspoons 20mlCornstarch
1/4 cup 59mlVinegar
1 tablespoon 15mlSoy sauce
1/2   Green or red pepper - cut into 3/4" cubes
1/4 cup 15g / 0.5ozSliced green onions
  Hot Poached Halibut
1 1/2 lbs 681g / 24ozHalibut steaks - thawed if necessary
2   Onion slices
2   Lemon slices
4   Parsley sprigs
  Several peppercorns

Recipe Instructions

Drain pineapple; reserve syrup. Add water to reserved syrup to equal 1 cup. Combine with sugar, cornstarch, vinegar and soy sauce. Cook and stir until thickened.

Add pineapple, peppers and green onions; cook 1 minute longer. Serve over poached halibut.

Poached Halibut: Cover halibut with boiling, salted water. Add onion, lemon, parsley and peppercorns. Simmer, covered, allowing 10 minutes per inch of thickness measured at its thickest part, or until halibut flakes when tested with a fork.

This recipe yields 4 servings.
