Lime Chicken Shish Kabob

Recipe Ingredients

2   Chicken breasts - cut in
  Cubes
2   Limes - juice of
20   Garlic - minced
1 tablespoon 15mlLow sodium soy sauce
1 tablespoon 15mlApple juice concentrate
8 oz 227gMedium mushrooms
1   Red bell pepper - cut in 1"
  Cubes
16   White pearl onions
1   Green bell pepper - cut in 1" pieces
2   Zucchini - cubed (small)

Recipe Instructions

Combine lime juice, garlic, soy sauce and apple juice and marinate the chicken in it in the refrigerator at least 2 hours, turning occasionally.

Alternate chicken and vegetables on skewers.

Grill or broil about 10 minutes, turning and basting with marinade.
