Samosas - Mixed Vegetable Filling

Recipe Ingredients

30 x  Cooking oil
5   Curry leaves
1   Onion - finely chopped (large)
1   Green chile - finely chopped
5 x  Crushed garlic
5 x  Ground jeera - (cumin)
2 1/2 x  Turmeric
  Salt to taste
500 x  Frozen mixed vegetables
30 x  Chopped coriander leaves - ()
10 x  Chopped chives

Recipe Instructions

Heat oil, add curry leaves and after a few seconds add onion, chile, garlic, jeera, borrie and salt. Allow to simmer for about 10 minutes. Add vegetables and cook a further 10 minutes.

Mix in dhunia leaves and chopped chives when mixture has cooled.

fills 36 samosas.
