Tuscan White Bean Salad Recipe - Cooking Index
2 | White beans - drained - (15 oz) | |
1 cup | 146g / 5.1oz | Parsley - chopped |
1 cup | 62g / 2.2oz | Tomato - chopped (medium) |
5 tablespoons | 75ml | Olive oil - extra virgin |
3 tablespoons | 45ml | Lemon juice - fresh squeezed |
5 | Garlic - fresh - minced | |
1/2 tablespoon | 7.5ml | Kosher salt - or to taste |
1/2 teaspoon | 2.5ml | Fresh cracked pepper - or to taste |
Mix all ingredients -- taste for seasonings.
Recipe may be doubled -- though be careful with the salt.
Best if served at room temperature.
