John Willingham's Hush Dem Puppies

Recipe Ingredients

4 cups 250g / 8.8ozYellow cornmeal
1 teaspoon 5mlW'ham Mild Seasoning
1/2 cup 31g / 1.1ozAll-purpose flour
1/3 cup 65g / 2.3ozSugar
1 cup 62g / 2.2ozOnion - finely diced (medium)
4 cups 792g / 27ozEgg - beaten (large)
1 teaspoon 5mlGarlic powder
1/4 cup 59mlVegetable oil - plus more for deep-frying
1 1/4 cups 296mlWater
1 cup 146g / 5.1ozRed bell pepper - chopped (optional) (medium)

Recipe Instructions

In a large bowl, combine the cornmeal, seasoning mix, flour and sugar. Stir in the onion, eggs, garlic powder and 3/4 cup of oil. Mix well and then stir in water. Add red pepper if desired.

Heat the deep-frying oil in a deep-fat fryer or deep skillet to 350F. Scoop the dough by tablespoonfuls and drop them into the hot oil. Fry each hush pup for 3 to 4 minutes until golden brown. Remove them with a slotted spoon and drain on paper towels. Repeat until all the dough is cooked. Serve hot.
