French West Indian Sauce Chien-Bbq Sauce

Recipe Ingredients

3   Garlic - peeled
2   Shallots - peeled, quartered (medium)
1   Scotch bonnet - seeded, quartered
  OR habanero chili
2 teaspoons 10mlFresh ginger - chopped
1/2 cup 20g / 0.7ozParsley leaves - flat leaf
1/4 cup 36g / 1.3ozFresh chives - chopped
  OR scallion greens
1/2 teaspoon 2.5mlFresh or dried thyme
1 teaspoon 5mlSalt - or to taste
1/2 teaspoon 2.5mlFreshly ground black pepper
1   Ground allspice
1/3 cup 78mlFresh lime juice - or to taste
1/2 cup 118mlExtra virgin olive oil.

Recipe Instructions

Finely chop the garlic, shallots, chili, ginger, parsley and chives in a food processor.

Add remaining ingredients, and process just to mix.

Add 1/4 cup boiling water, and process to mix.

Run the machine in short bursts until you have a coarse puree.

If desired, add more salt or lime juice, to taste.

The sauce can be served immediately, but it becomes more flavorful if you let it sit for an hour.

Yield: about 2 cups.
