Canadian Duck With Red Wine

Serves: 2 people

Recipe Ingredients

1   Cold roast duck - cut serving pieces
2 tablespoons 30mlButter
1 tablespoon 15mlOnion - chopped (medium)
2 tablespoons 30mlFlour
2 cups 125g / 4.4ozCondensed chicken consomme
  Juice of 1 orange
  Grated rind of 1 orange
1/4 cup 59mlDry red wine
  Salt - to taste
  Freshly-ground black pepper - to taste

Recipe Instructions

Melt butter and soften onion in it. Stir in the flour and brown it. Add consomme and simmer for 10 minutes. Add orange juice and grated rind, wine and duck pieces. Season to taste and simmer gently for 30 minutes.

This recipe yields 2 servings.
