Canadian Duck With Red Wine Recipe - Cooking Index
1 | Cold roast duck - cut serving pieces | |
2 tablespoons | 30ml | Butter |
1 tablespoon | 15ml | Onion - chopped (medium) |
2 tablespoons | 30ml | Flour |
2 cups | 125g / 4.4oz | Condensed chicken consomme |
Juice of 1 orange | ||
Grated rind of 1 orange | ||
1/4 cup | 59ml | Dry red wine |
Salt - to taste | ||
Freshly-ground black pepper - to taste |
Melt butter and soften onion in it. Stir in the flour and brown it. Add consomme and simmer for 10 minutes. Add orange juice and grated rind, wine and duck pieces. Season to taste and simmer gently for 30 minutes.
This recipe yields 2 servings.
