Dutch-Oven Polenta Doves Recipe - Cooking Index

| 1/4 cup | Flour - mixed with | |
| 1/2 cup | Polenta (cornmeal) | |
| 1/4 cup | Rendered salt pork | |
| 1/4 cup | Water | |
| 1/2 teaspoon | Dried savory | |
| 1/2 teaspoon | Ground ginger |
Roll birds in flour-polenta mixture. Brown quickly in drippings in a Dutch oven. Add enough water to keep from sticking, about 1/4 cup, and simmer, covered, for 30 minutes. Sprinkle on savory and ginger, and continue to cook, basting frequently, for another 30 minutes.
This recipe yields 3 to 4 servings.
