Bacon slices - as needed |
Hang a young goose for 2 to 5 days; then clean. Loosely stuff with potato stuffing. Put bird on a rack in a roaster with small amount of water in the bottom. Cover and cook on top of the stove, water simmering, for 1 hour. Lay strips of bacon over the top of the bird. Roast, uncovered, at 475 degrees until bird is browned and tender, basting every 15 minutes.
