Fluffy Pink Grapefruit Frosting

Recipe Ingredients

2		Egg whites
1 1/2 cups	297g / 10oz	Sugar
1 1/2 teaspoons	7.5ml	Light corn syrup
1/3 cup	78ml	Pink grapefruit cocktail
2 teaspoons	10ml	Vanilla
2		Red food coloring - up to 3

Recipe Instructions

Makes enough to fill and frost one two layer cake.

In the top of a double boiler, combine all the ingredients except vanilla and food coloring.

Place over boiling water and beat with an electric mixer about seven minutes or until frosting will stand up in soft peaks.

Remove from water and beat in vanilla and food colouring. Use immediately.
