Karen Butler's Banana Bread Recipe - Cooking Index
1/2 cup | 118ml | Vegetable oil |
1 cup | 198g / 7oz | Sugar |
2 | Eggs | |
1 cup | 237ml | Mashed ripe bananas |
1 teaspoon | 5ml | Lemon juice |
2 cups | 125g / 4.4oz | Sifted flour |
3 tablespoons | 45ml | Baking powder |
1/2 teaspoon | 2.5ml | Salt |
Optional | ||
1/2 cup | 55g / 1.9oz | Chocolate chips |
1/2 cup | 80g / 2.8oz | Raisins |
1/2 cup | 118ml | Nuts |
1. Cream oil and sugar.
2. Beat eggs until light and add to the oil and sugar
3. Mash bananas and add lemon juice. Blend with creamed mixture
4. Sift Flour, baking powder and salt and mix into banana mixture. Add chips, nuts, raisins.
5. Bake in greased 9X5X3 loaf pan at 375F for 1 1/4 hours.
Makes 1 loaf.
