Karen Butler's Banana Bread

Recipe Ingredients

1/2 cup 118mlVegetable oil
1 cup 198g / 7ozSugar
2   Eggs
1 cup 237mlMashed ripe bananas
1 teaspoon 5mlLemon juice
2 cups 125g / 4.4ozSifted flour
3 tablespoons 45mlBaking powder
1/2 teaspoon 2.5mlSalt
  Optional
1/2 cup 55g / 1.9ozChocolate chips
1/2 cup 80g / 2.8ozRaisins
1/2 cup 118mlNuts

Recipe Instructions

1. Cream oil and sugar.

2. Beat eggs until light and add to the oil and sugar

3. Mash bananas and add lemon juice. Blend with creamed mixture

4. Sift Flour, baking powder and salt and mix into banana mixture. Add chips, nuts, raisins.

5. Bake in greased 9X5X3 loaf pan at 375F for 1 1/4 hours.

Makes 1 loaf.
