3/4 cup | 148g / 5.2oz | Margarine |
1/2 cup | 99g / 3.5oz | Sugar |
1 3/4 cups | 255g / 9oz | Cracker crumbs |
3/4 cup | 46g / 1.6oz | Flour |
1 teaspoon | 5ml | Baking powder |
1/2 teaspoon | 2.5ml | Salt |
1 tablespoon | 15ml | Milk |
Filling | ||
1 cup | 198g / 7oz | Sugar |
2 tablespoons | 30ml | Corn starch |
1 | Egg | |
1 cup | 237ml | Hot water |
1/2 cup | 46g / 1.6oz | Coconut |
BASE: Mix all ingredients well and put half in 8 inch pan and put filling on top then cover with rest of crumbs and bake until well browned.
FILLING: Put first 4 ingredients in saucepan and cook over medium heat until thick, remove from heat and add coconut, pour over crumbs in pan and put rest of crumbs on top.
