Melon With Lavender Syrup

Recipe Ingredients

1/2 cup 99g / 3.5ozSugar
1/2 cup 118ml-- water
1/4 cup 59mlSweet dessert wine*
2 tablespoons 30mlOrange juice
1/4 cup 59mlFresh or dried lavender - - flowers
1 cup 237mlRipe melon - cubed (large)
  Garnish
  Fresh mint leaves

Recipe Instructions

* Sauterne, Grenache or sweet Riesling.

Bring sugar, water, wine and orange juice to a boil; reduce heat and simmer for 5 minutes, stirring once or twice to dissolve sugar. Add lavender flowers. Cover and steep for 1 to 2 hours. Strain out lavender flowers, pressing on pulp.

To serve, pour syrup over melon; gently toss. Garnish with mint leaves.

Yield: 4 to 6 servings.
