Tropical Cheese Bars

Recipe Ingredients

  Crust
3/4 cup 148g / 5.2ozMargarine
3/4 cup 120g / 4.2ozBrown sugar
3 cups 187g / 6.6ozFlour
1 cup 93g / 3.3ozAlmonds - finely chopped
1/4 cup 23g / 0.8ozCoconut rum
  Cheese Layer
24 oz 681gCream cheese - softened
1/2 cup 99g / 3.5ozSugar
1/4 cup 23g / 0.8ozCoconut rum
2   Crushed pineapple; drain - large cans
1 cup 93g / 3.3ozCoconut
1 cup 93g / 3.3ozAlmonds - chopped
3   Eggs

Recipe Instructions

Cream margarine, sugar and coconut rum, beat in flour until blended. Stir in nuts. Pat into 10x15" pan. Bake at 350F for 10 minutes. Cool.

CHEESE LAYER: Beat cheese, sugar, eggs and coconut rum until creamy. Stir in pineapple. Pour on baked crust. Mix nuts and coconut. Sprinkle over all. Bake at 350F for 20 minutes. Cool. Cut into bars.
