Fontina And Grilled Vegetables Wrap

Recipe Ingredients

1/2 cup 118mlMayonnaise
1/4 cup 10g / 0.4ozChopped basil leaves
  Juice of 1 lime
1   Zucchini (medium)
1   Red, yellow or orange bell pepper - quartered
2   Red onion slices, about 1/4" thick
  Olive oil
  Salt and pepper
2 cups 474mlShredded Romaine lettuce
1/2 lb 227g / 8ozFontina cheese - grated
2 lbs 908g / 32ozFlour tortillas (large)

Recipe Instructions

Prepare spread in a small bowl. Combine mayonnaise, basil, and lime juice. Stir to blend. Brush vegetables with olive oil. Season with salt and pepper.

Arrange vegetables on a medium-hot barbeque. Cook 2 to 3 minutes, or until grill marks appear. Flip over and grill an additional 2 minutes.

Lay out flour tortillas, and spread on the mayonnaise mixture. Place lettuce on tortilla, top with cheese and vegetables off the grill. Wrap as you would a burrito.

Serves 2.
