Marinated Lentils

Recipe Ingredients

1/2 lb 227g / 8ozBrown lentils
1/2 cup 31g / 1.1ozFinely-diced onion
2 tablespoons 30mlOlive oil
2 teaspoons 10mlChopped fresh mint
2 teaspoons 10mlChopped fresh basil
1 teaspoon 5mlGround cumin
1 teaspoon 5mlMinced garlic
  Salt - to taste
  Freshly-ground white pepper - to taste

Recipe Instructions

Place the lentils in a pot with cold water to cover and cook until tender but not mushy. Drain lentils, and while still hot, toss thoroughly with onion, olive oil, herbs, spices and garlic. Season to taste with salt and white pepper.

This recipe yields 4 servings.
