Stir-Fried Calamari

1 lb 454g / 16ozCalamari tubes - julienned
1 cup 110g / 3.9ozJulienned carrots
1 cup 237mlJulienned yellow squash
1 cup 237mlJulienned red cabbage
1 cup 237mlJulienned zucchini
1/2 cup 118mlSprouts
1/4 cup 59mlPeanut oil
2 tablespoons 30mlSoy sauce
2 tablespoons 30mlChopped fresh cilantro
  Salt - to taste
  Freshly-ground black pepper - to taste
1 cup 146g / 5.1ozChopped peanuts
2 teaspoons 10mlSesame oil

Recipe Instructions

Preheat wok. Heat peanut oil until smoking. Add vegetables and stir-fry until slightly tender, stirring constantly. Add calamari, garlic, and sprouts, stirring constantly. Add remaining ingredients and continue stir-frying for 2 to 3 minutes. Add the sesame oil. Adjust seasoning if needed.
