Jicama Orange Salad

Recipe Ingredients

2 cups 292g / 10ozDiced peeled jicama
3   Seedless oranges - peeled, and
  Cut into sections - (abt 1 cup)
2 tablespoons 30mlFreshly-squeezed orange juice
1/4 cup 15g / 0.5ozFinely-chopped red onions
3 tablespoons 45mlFinely-chopped red bell peppers
3 tablespoons 45mlChopped fresh cilantro
1/2 teaspoon 2.5mlSalt
3   Peppermill turns black pepper

Recipe Instructions

Combine all of the ingredients in a bowl and toss until thoroughly blended. This can be made a day ahead and stored in the refrigerator in an airtight container.

This recipe yields 2 servings.
