Maytag Blue Sabayon Sauce Recipe - Cooking Index
3 cups | 594g / 20oz | Egg yolks (large) |
2 teaspoons | 10ml | Minced shallots |
1/3 cup | 48g / 1.7oz | Crumbled Maytag blue cheese |
1/4 teaspoon | 1.3ml | Salt |
1/8 teaspoon | 0.6ml | Freshly-ground white pepper |
1 teaspoon | 5ml | Snipped fresh chives |
Combine all of the ingredients in a small stainless-steel bowl. Set the bowl over a pot of simmering water and whisk until the mixture begins to thicken, about 2 minutes. Remove from heat.
This recipe yields 3/4 cup of sauce.
