Southern Squirrel Casserole

Serves: 4 people

Recipe Ingredients

2   Squirrels - cut serving pieces
  Seasoned flour
1/4 cup 40g / 1.4ozRice
1   Green bell pepper - minced
1   Onion - minced (small)
1/2 cup 55g / 1.9ozChopped celery
1 cup 146g / 5.1ozDiced tart apple
  Boiling water - as needed

Recipe Instructions

Roll pieces of meat in seasoned flour and put into a well-greased, large shallow casserole. Sprinkle on the rice, green pepper, onion, celery, and apple. Barely cover with boiling water. Cover the dish tightly with a double thickness of foil and bake at 300 degrees for about 1 hour, or until tender.

This recipe yields 4 servings.
