1 1/2 lbs | 681g / 24oz | Medium raw shrimp - shelled, deveined |
Marinade | ||
1 tablespoon | 15ml | Chinese rice wine or dry sherry |
2 teaspoons | 10ml | Cornstarch |
1/2 teaspoon | 2.5ml | Salt |
Freshly-ground white pepper - to taste | ||
Sauce | ||
1/3 cup | 78ml | Mayonnaise |
2 teaspoons | 10ml | Sugar |
2 teaspoons | 10ml | Oyster-flavored sauce |
2 teaspoons | 10ml | Sesame oil |
1 teaspoon | 5ml | Grated lemon peel |
1 teaspoon | 5ml | Chili garlic sauce |
To Finish | ||
4 cups | 584g / 20oz | Chopped iceberg lettuce or Napa cabbage |
2 tablespoons | 30ml | Cooking oil |
2 tablespoons | 30ml | Chicken broth - (to 3) |
1 cup | 237ml | Diamond Sesame Glazed Walnuts |
Combine marinade ingredients in a bowl. Add shrimp and stir to coat. Let stand for 20 minutes.
Combine sauce ingredients in a bowl. Place chopped lettuce or Napa cabbage on serving plate.
Place a wok over high heat until hot. Add oil, swirling to coat sides. Add shrimp and stir-fry until pink, about 2 to 3 minutes. Add broth and cook for 1 minute. Add sauce and toss to mix well.
Arrange shrimp on plate over chopped greens; sprinkle with Diamond Sesame Glazed Walnuts.
