Herbed Mayonnaise Recipe - Cooking Index
You can make your own mayonnaise in a food processor with this recipe. For the herb flavor, thyme, rosemary and tarragon are our favorites, but just about any kind will work.
Courses: Dips and Spreads, Sauces2 | Egg yolks | |
1 | Egg | |
1 tablespoon | 15ml | Lemon juice |
1 tablespoon | 15ml | Red wine vinegar |
1 tablespoon | 15ml | Sea salt |
1 teaspoon | 5ml | Freshly-ground white pepper |
2 tablespoons | 30ml | Dijon mustard |
2 cups | 474ml | Canola oil |
1 cup | 237ml | Olive oil |
1 cup | 146g / 5.1oz | Chopped fresh herbs |
Blend together the first 7 ingredients. With the food processor running, slowly drizzle canola oil and olive oil. If it's too thick, thin with water -- too thin, add more oil until you achieve the right consistency. (You can also use a good quality mayonnaise like Hellmann's or Best Foods.)
Mix in the chopped fresh herbs.
